San Martino, “99” Prosecco Brut is born in the heart of Treviso, among the gentle hills and vineyards where the Glera variety reveals the freshness and character of the terroir. Here, sunny days help the grapes to reach a soft ripeness, and cool nights preserve the very freshness that will become the basis of the future sparkling wine.
Harvest begins in the first days of September. At the winery, only healthy, fully ripened bunches are selected, which are immediately cooled to preserve the delicate aromas. The grapes are then left on the skins for a short time – this technique helps to highlight the character of the variety and add a little more depth to the future wine. Primary fermentation takes place at a low, strictly controlled temperature, which helps to preserve the natural purity and elegance of Glera.
The secondary fermentation takes place in autoclaves using the Charmat method. During this period, the wine is saturated with delicate bubbles, and a short stay on the sediment makes the texture velvety, adding light creamy notes. This method is the result of a thoughtful approach and respect for local traditions.
