Chateau Saint-Pierre, “Tradition” Cotes de Provence AOC Blanc is an elegant white wine that has been produced for decades. Today, it uses more modern production methods, but the composition of the blend remains the same as the shape of the bottle. It includes such grape varieties as Role, Claret and Uni Blanc. All varieties are traditional for growing in Provence. Grapes are harvested by hand, ground and left in tanks for 4 hours. The temperature is strictly controlled and maintained at 14 ° C. Grapes are slowly compressed, the separated juice is defended for 24 hours in order to be able to remove unwanted fine particles. Alcoholic fermentation occurs at a temperature of 20 ° C. Malolactic fermentation is blocked to preserve freshness. Wine is aged in steel tanks about 3 months before bottling.
