White semi-dry wine Pinot Gris Reserve is produced in the municipality of Bergheim, located in Alsace. The vineyards are located in a hilly area, which is characterized by a predominance of soil heavy clay and limestone layers. Crop is harvested by hand in early October. Under the press are whole bunches of berries. Juice with pulp obtained by pressing separated from their own past, and sent to defend (“debourbage”) on the day. Then, the must is filtered. Alcoholic fermentation takes place in a combination of wild yeasts that live on the skin of the fruit, with breeding cultures. Wort is fermented in stainless steel tankers. Young wine vinification process undergoes double decanting: the first time during removal from the sediment, the second – during the clarification. The wine is aged in steel tanks for at least six months. Wine storage potential is 7-8 years.
