Taste

The pleasant, clean, juicy, piquant, rich taste of wine proves that the richness of the bouquet does not diminish its elegance. The taste palette is dominated by notes of raspberry compote, black cherry, cinnamon, flowers and a hint of jerky, while taut, noble tannins and bright acidity provide the perfect balance. The finish is long, persistent, lively.

The exquisite aroma of the wine slowly reveals notes of dried rose petals, peonies, cherry blossoms, new skin, cloves and cool menthol tones.

Gastronomy

All the beauty and power of Piedmont’s philosophy is manifested in the traditional red dry wine Massimo Rivetti, Barbaresco DOCG. It is made from Nebbiolo grapes grown in the Neiva vineyards. Vineyards occupy 2.5 hectares at an altitude of 380 meters above sea level, have a southwestern exposure. The soils here are mixed, mainly clay and chalk. The average age of the vines reaches 25 years. Productivity per hectare does not exceed 7,000 kg. Organic practices are practiced in the vineyard and in the cellar with minimal interference with the natural process. Thanks to targeted biological management, mutual harmony of soil, climate and vines is achieved. Harvesting is carried out manually in early October. Fermentation takes place at a strictly controlled temperature of 28 ° C for 12-15 days in French oak barrels with frequent pumping of wort for the complete extraction of color and tannins. During fermentation, only natural yeast present on the skin of grapes is used. This is followed by maceration for 30 days. The wine is aged in barrels of Slavonian oak for 18 months. As a rule, wine is bottled without filtration. After bottling, the wine remains aged in bottles for at least 6 months. The potential of wine is 10-15 years.
